WHEREAS, Longtime restaurateur Juan Caro of Rio Grande City | ||
passed away on April 15, 2007, at the age of 75, leaving behind a | ||
record of service that his loved ones can remember with pride; and | ||
WHEREAS, Born on October 20, 1931, Juanito Caro was seven | ||
years old when his father died, and his mother opened a restaurant | ||
in their home to support the family; she cooked and served the food | ||
with the help of her children, and Caro's Restaurant eventually | ||
became a popular eatery known for its puffy tacos and tostados; and | ||
WHEREAS, Mr. Caro graduated from Rio Grande High School and | ||
answered his nation's call to duty with service in the U.S. Army; he | ||
was stationed in France for a time before returning home to save | ||
money for college; he paid his way through the University of | ||
Wisconsin at River Falls and earned a degree in agriculture; and | ||
WHEREAS, Settling in Rio Grande City, Mr. Caro became manager | ||
of the restaurant in 1972, and along with his wife, Maria del Carmen | ||
Caro, helped the business survive some lean times; the operation | ||
was still operated out of Mr. Caro's childhood home, and in 1980, he | ||
opened an extension to the dining area that accommodated 40 more | ||
people; he expanded the space several more times until finally | ||
moving Caro's into a separate building in 1998; along the way, he | ||
applied his education through work on the family ranch; and | ||
WHEREAS, Mr. Caro delighted in handing out lollipops to | ||
children at the restaurant, and his loving and generous nature was | ||
further expressed in his devotion to his family; he and his wife | ||
enjoyed 35 years together, and he was the proud father of two sons, | ||
Juan Samuel Caro and Cary Allen Caro; and | ||
WHEREAS, Although Juanito Caro is deeply missed, memories of | ||
his compassion and enthusiasm for life remain to comfort and | ||
inspire all those who were fortunate enough to know him; now, | ||
therefore, be it | ||
RESOLVED, That the House of Representatives of the 82nd Texas | ||
Legislature, 1st Called Session, hereby pay tribute to the life and | ||
legacy of Juan Caro. | ||
